Actually, polyphony began in Europe in the Medieval era when plainchant added 1st a drone tenor, then c850 movement in parallel harmony (not the 3rds & 6ths that are widely used now - they were considered discordant, but in the "perfect" harmonies - 4ths & 5ths), then slightly more independent voice movement in the melismatic organum of Leonin & Perotin by c1200. From there the conductus & motet developed eventually into three voice parts - always in triple time (in deference to the holy trinity, since the only polyphonic music was sacred). That takes us to the 13th C, when organs were bellows powered. The piano was a way off.
