Excellent post. A lot of businesses these days are going through an "identity crisis" as they try to cull more customers- and it seems the smaller the business, the worse it gets. Establishing a well-defined niche and then strategically branching out is definitely the way to go.
BTW, I've also seen the incredible returns a well thought out business partnership can bring to all the businesses involved especially among community alliances and those who cross promote products and services that compliment each other.

So many people these days, perhaps do to the tough economy, are trying to diversify. Adding services is great, as long as, like your stated, you are an expert in the additional services. It might be tempting for that great hairdresser to beging offering manicures, but if they are terrible at manicures, now matter how great they are at doing hair, their reputation will be damaged.
