I find a mixture of lists and mind-mapping for the general content is a good start - then narrow it down into chapter or headings or categories (depending on style of the ebook).

A great overall approach Derbhile, this post is perfect for anyone wanting to just get stuck in, and are struggling with the unmade content jigsaw :-)
