Joel: I will write about bubble in my 9th book on tea. ;) It has an "interesting" taste, or should I say, acquired taste? :) I would say that it could fit the same category as frozen yogurt places. A healthy basic product (tea and yogurt), and then you add stuff it ("bubbles" and "toppings")...
